Local Low Budget Larb

Larb is a delicious, fresh Thai dish. But my mom customized the recipe so that you could get ingredients from your local grocery story - and not have to worry about going to an international market. I like to just eat this with steamed rice.


Ingredients

Dressing

  • 1/4 cup lime juice

  • 3 tbsp fish sauce

  • 3 tbsp sugar

Salad

  • 1 lb ground chicken, pork, or beef (cooked, unseasoned)

  • 1 bunch of cilantro, chopped

  • 6-7 sweet red peppers, or 2 bell peppers, thinly sliced julienne

  • 3 stalks of celery, thinly sliced julienne

  • 1/2 tbsp garlic powder

  • 2 tbsp toasted rice powder *(see below to make your own)

  • 1 tbsp red chili flakes or chopped Thai chili

Instructions

*Make your own rice powder: Spread 1/3 cup of uncooked jasmine rice on a baking sheet and roast at 400 until golden brown. That’ll be around 10 minutes but keep an eye on it! Then grind into a fine powder in a food processor, blender, or coffee grinder.

  1. Combine dressing ingredients until the sugar is dissolved

  2. Toss in a large bowl with remaining ingredients

  3. Best served slightly warm, don’t reheat.
