Hot and Sour Soup

This is a favorite comfort soup from Mama Lim’s kitchen.


Ingredients

  • 10 cups of water

  • 1 lb bone-in chicken, chopped into 1-2” pieces

  • 1/2-1 pack of tamarind soup base

  • 2 tsp sugar

  • 1 tbsp chicken boullion powder

  • 1.5 tbsp fish sauce

  • basil leaves (handful)

  • kefir lime leaves (handful)

  • 3-4 stalks celery, sliced

  • 1 cup halved grape tomatoes

  • 2 cups pineapple chunks, fresh

  • Scallion for garnish

Instructions

  1. Bring water to a boil with the chicken - generously salt

  2. Once chicken is cooked, add in half of the tamarind soup, sugar, chicken powder, fish sauce, pineapple, and celery.

  3. Simmer for 15-20 minutes. Taste as you go to adjust flavor. May need more tamarind soup base to increase sour-ness.

  4. When done, add in the tomatoes, leaves, and chili.

  5. Remove from heat and serve hot.
