Hot and Sour Soup
This is a favorite comfort soup from Mama Lim’s kitchen.
Ingredients
10 cups of water
1 lb bone-in chicken, chopped into 1-2” pieces
1/2-1 pack of tamarind soup base
2 tsp sugar
1 tbsp chicken boullion powder
1.5 tbsp fish sauce
basil leaves (handful)
kefir lime leaves (handful)
3-4 stalks celery, sliced
1 cup halved grape tomatoes
2 cups pineapple chunks, fresh
Scallion for garnish
Instructions
Bring water to a boil with the chicken - generously salt
Once chicken is cooked, add in half of the tamarind soup, sugar, chicken powder, fish sauce, pineapple, and celery.
Simmer for 15-20 minutes. Taste as you go to adjust flavor. May need more tamarind soup base to increase sour-ness.
When done, add in the tomatoes, leaves, and chili.
Remove from heat and serve hot.
